Sweet potatoes are one of the potatoes that I enjoy the most, not only for their wonderful flavor but also for their magical powers. It may sound fantastic but they do indeed have many health benefits. They balance blood sugar levels, and if you eat a daily serving of 1 cup of sweet potato will reduce your cravings for sweet and processed foods. With that only change, you are losing weight already.
The sweet potato is filled with a high level of vitamin C to have a strong immune system, a lot of potassium for cramps and the nervous system and beta carotene in amounts to stabilize sugar levels, glucose in the blood. There are different colors of sweet potato, white, orange and purple. All are delicious.
This is one of my favorite recipes to make at home and the kids like it a lot because it is soft to eat and has a sweet palate.
Ingredients
- 2 big or 4 small white sweet potatoes
- 2 cups of prepared lentils
- 2 small carrots chopped very small
- ½ cup diced tomatoes
- 2 stalk of celery chopped very small
- 2 large scallions chopped
- 2 tablespoons chopped fresh oregano
- 2 tbsp tamari o soy sauce gluten free
- ½ cup fresh basil chopped
- 1 cup spinach chopped
- ¼ teaspoon cumin and curry very light touch
- Salt and pepper to taste
Instructions
First peel and chop the white sweet potatoes into medium chunks. Get them in a pot of water and let them boil for at least 15-20 minutes, or in a steamer if you have one. Meanwhile, chop the carrots, scallions and celery into very small chunks, also chop the fresh oregano. To make things easier you can use a food processor. Add this to a large skillet over medium heat with a 1/4 cup of water and allow them to soften in medium low heat.
Once the veggies are softened, add the prepared lentils. (I used to cook myself the lentils, And I keep the leftovers In the freezer few weeks. So I use those lentils for new recipes easy and faster.) Add the cumin and curry. Let these to cook for 15 minutes with the veggies.
Preheat the oven to 350º F. Add the of diced tomatoes with the juices, basil leaves, and the chopped spinach. Finally add a splash of soy sauce and taste. Let this filling simmer for 10 minutes for the flavors be combined.
When the white sweet potatoes are soft, remove the water and mash with a little salt and black pepper. Add half of the mashed sweet potatoes on a glass oven pan and top with a layer of the filing of lentil and end with another layer of sweet potatoes.
Bake in the oven for about 20 minutes until the topping becomes slightly browned. Allow to cool before serving. Enjoy this yummy and easy recipe for the whole family. Voila!!
