Pizza is one of the foods that we all love, and this gluten-free, low fat, very low carbo and really delicious recipe is one of my favorites when I have guests at home. Surprise your guests with this delicious zucchini pizza.
Oh yeah … Have Pizza and Indulge.
Ingredients
- 10 shredded green zucchinis
- 1 cup almond cheese mozzarella style
- 1 egg
- ⅔ cup almond flour
- ⅓ cup quinoa flour
- 1 ½ tsp sea salt
- 1 tbsp dried basil
- 2 tbsp dried oregano
- 1 tbsp garlic powder
- ½ cup Napolitana Sauce (Find my recipe)
Instructions
First, turn on the oven and preheat 500F.
In a large bowl place the shredded zucchinis, add 1 tsp salt, mix well and set aside for 15 minutes.
Discard the excess of water with a cheese clothe, wringing it out. I like to use the milk nut bag and squeeze well all the moisture out. Place all the shredded zucchini that has been wrung out back to the bowl, add the almond mozzarella cheese grated, egg, flours, dried herbs, salt, garlic powder and with your hands mix all the ingredients very well.
Take a baking sheet to transfer to the oven. Put parchment paper and place the mixture on it. Spread the zucchini mixture to make a circle form of ½ inches thick.
Transfer to the oven for 15 to 18 minutes checking occasionally until you see the top and the bottom start golden brown. Set aside for at least 1 hour.
Take a baking sheet and cover it with foil. Place the baked zuchinni crust on it, top the pizza with napolitana salsa and the grated almond cheese. Put on the top slices of tomato mushrooms, leeks and green olives. Crush some black pepper and dried oregano to finish it. Transfer the pizza to the oven for 10 mins, 500 degrees F. Wow, put fresh basil and olive oil on the top. Deli deli.
I love this combination so much, hopefully my guests will enjoy too. Now indulge! Be free to use any additional topping of your preference. Be creative!
