I love all kind of ceviche!! Ceviche is a latin american recipe for raw fish or seafood marinated in citrus juice, lemon or lime juice, but Im fascinated with the wonderful taste of artichokes in combining with this latin citrus marinades.

If you want to try something different, Artichoke Ceviche results incredible like a dish for a hot sunny day. This recipe is easy, flavorful, light, healthy and yummy.

Artichokes are delicious and very good for its properties for cholesterol, obesity, hypertension, diabetes, constipation and cancer.

Uncooked purple artichokesIngredients

Main

  • 1 can of organic chopped artichoke hearts or frozen artichokes hearts, defrosted and steamed)
  • 1 can of organic roasted red bell pepper without skin
  • ¼ cup minced red onion
  • 3 tbsp capers
  • ¼ cup chopped cilantro
  • ¼ cup chopped parsley
  • ½ avocado

Citrus Marinade

  • 1 ½ lime or lemon juice
  • 2 tbsp red wine vinegar
  • 1 tsp sea sal
  • fresh ground pepper
  • 1 pinch red pepper flakes or tabasco sauce (as much as you want, mild or hot)
  • 4 tbsp olive oil
Instructions

Chop the artichokes and the roasted red bell pepper, add the minced red onion, capers, cilantro and parsley and mix well.

Citrus Marinade: Mix lemon juice,vinegar, salt, pepper, tabasco and olive oil.

Place the artichokes hearts in a bowl and toss with enough marinade to moisten, let stand for 30 minutes for the flavors blend well. Put slices of avocado on the top. Serve on fried green plantain tostadas, corn tostadas or lettuce leaves.
