Mashed Pumpkin

Cut the pumpkin and take out the seeds. You can use the seeds also for other recipes. Wash and dry them very well, take it to the oven 250 degrees F for 6 hours. Seeds will be pretty dried and you can add some sea salt to flavor them. You can also add them to your shakes to increase your dose of magnesium.

Cut the pumpkin into pieces and put it in a baking sheet with coconut oil, roast it for 45 mins in the oven at 420 degrees.

Once roasted and browned, remove the skin and put their meat in a processor and make pure.

Put the puree in plastic bags to freeze, take them to the freezer for up to 2 months preserved. You already have puree for other recipes of your preference.

Crust

Ingredients

To make this yummy gluten free crust full of flavor you will need:

  • 2 cups almond flour (I use a nut and coconut flour that is already mixed)

  • ½ cup of sea salt

  • 2 tbsp of coconut nectar sugar

  • ⅓ cup of coconut oil

  • 1 scrambled egg

Mix all the ingredients, add coconut oil and the scrambled egg. Knead until reaching a ball and stretch it in a tart pan, border all around so that it is our crust for this pie. Take it to the freezer for 15 mins while doing the filling.

Pumpkin Filling

My favorite assistant eats the pumpkin pie filling.

Ingredients
  • 15 oz pumpking puree
  • 2 scramble eggs
  • ½ cup coconut milk
  • ½ cup maple syrup
  • 2 Tps almond butter
  • ¼ sea salt
  • 1 tsp cinnamon
  • ½ tsp nugmet
  • ½ tsp ground ginger
  • ¼ tsp cardamon

Mix all these ingredients very well as little Lucia shows us in the photo. The taste is incredibly delicious.

Bring out the crust from the freezer, add this deli pumpkin filling mixture. Take it to the oven previously preheated to 350 degrees F for 45 to 50 minutes or until the center is not wet.

This is how this yummy baked Pumpkin Pie looks like !! Let it cool for 2 hours before serving. This is one of my favorite sweet recipes, I hope everyone enjoys it at home in the holidays or for especial occasions.
